Health Breakfast On Road Trip With Low Sugar

Road trips are good, old-fashioned family fun, a time of bonding and sight-seeing, right? Right! Unless, of course, you are packing the kids full of sugar and the energy highs and lows that follow. The most important meal of the day being breakfast, it is important to pack things in the cooler that will get everyone off to a happy and healthy start. There are many foods that will assist you in enjoying your road trip, even with the little ones. Here below:

Bran Muffins
Hard boiled eggs
Snacks and Peanuts
Trail mix

When it comes to drinks, watch out! Those cute little drink boxes will bring the sugar gauge up, up, up! Opt for bottled water or cartons of milk. Fresh squeezed juice is good, as well.

There are many options for keeping the sugar down on the road. You will enjoy a much more pleasant family vacation by packing these and saving the sweets for a time when you are not packed together in the car. Healthy traveling is happy traveling!

Run Bran Buds Muffins On Whell

Bran muffins are great. Kids like them since they look like cupcakes and you can add a bit of honey to sweeten for the pickier palette. Baking them as mini muffins will be easier for littler hands. The following is my favorite recipe for these little wonders.

Ingredients:

2 cups boiling water
2 cups Bran Buds cereal
1 cup shortening
3 cups sugar
4 eggs
1 quart buttermilk
5 cups flour
1 tsp. salt
5 tsp. baking soda
4 additional cups Bran Buds cereal
1 cup raisins


Instructions:

  • Mix 2 cups boiling water with 2 cups Bran Buds cereal in a large bowl. Mix and allow cooling in the refrigerator while you prepare the rest of the recipe.
  • Cream shortening, sugar, eggs, and buttermilk.
  • Add cooled mixture.
  • Add flour, salt, baking soda, additional 4 cups Bran Buds, and raisins. Mix thoroughly.
  • Bake at 425 degrees F. for 15 minutes in greased muffin pans.

Health Hard Boiled Eggs

Hard boiled eggs are another road trip breakfast that will eliminate the sugar woes. Hard boil the eggs and wrap them in cooked bacon the night before. Place in the cooler and when it is time to eat them, they will be full of the bacony flavor to be enjoyed by all.

Snack Kids Favorite On Travel

At the family traveling, while on road trip, snack bags of cereal are fun for the kids. They will be fun for you as well if you choose the right ones. Cheerios, granola cereals, and Kix mixed together in a bag are fun grab and go mini meals.

Beside, another snack kids favorite is peanut butter and banana sandwiches. Peanut butter and banana sandwiches on whole wheat bread are another option that keeps the sugar low and tolerance high.

Making Your Own Trail Mix

Trail mix also good for breakfast on road trip, but be careful if you are buying the pre made type as some of this is loaded with sugar. Making your own is a better idea. Include dried fruits, nuts, and seeds, leaving out the M&Ms found in many of the store bought bags.

Yummy Fish Recipes

DEVILED FISH BROIL

  • 1 tsp. dehydrated onion flakes
  • 1/4 tsp. Red Hot sauce
  • 1/2 tsp. Worcestershire sauce
  • 1/2 tsp. soy sauce
  • 8 oz. uncooked fish fillet
  • 1 tbsp. prepared mustard
  • 1/2 tsp. parsley, fresh, minced

Combine all ingredients except fish, Mix well, Brush on both sides of fish. Broil until fish flakes easily with fork.

Salmon Recipes Favorite

DELICIOUS SALMON

  • 6 oz. salmon
  • 1 tbsp. chopped green pepper
  • 1/4 tsp. onion flakes
  • 1/4 tsp. horseradish
  • 1 to 2 tbsp. diet French dressing
  • 3 oz. Swiss cheese
  • 6 slices tomatoes

Mix first 5 ingredients well and divide into thirds, Spread on 3 slices of toast, Add 1 ounce cheese and two slices of tomato, Place under broiler until cheese bubbles.

1 lb. ground chuck
1 (16 oz.) can bean sprouts, drained
1 tbsp. Worcestershire sauce
1 tsp. salt

Brown Sweet And Sexy Fudge

CREAMY CHOCOLATE FUDGE

4 tbsp. diet butter
1/4 c. brown sugar replacement
1/4 tsp. instant coffee
1 envelope and 1/2 tsp. unflavored gelatin
1/4 c. cream flavored diet soda
2/3 c. nonfat dry milk
1 1/3 c. Ricotta cheese
1 tbsp. chocolate extract
1/2 tsp. vanilla
2 tsp. artificial sweetener (liquid)
1/2 tsp. brown food coloring
2 pkg. W.W. dried apples

Direction follow:

Place margarine in a small pan over hot water to melt, Sift brown sugar and coffee very slowly into margarine, Stir constantly, Soften gelatin in soda. Add nonfat dry milk, Add a few drops more of soda if needed, The mixture needs to be paste like, Combine gelatin mixture with margarine mixture, Stir constantly over hot water until thoroughly blended, Combine cheese, extracts, sweetener, and food coloring, Mix well, Fold gelatin-margarine mixture into Ricotta mixture, Pour into 8 x 8 x 2 inch pan, Refrigerate 2 hours, Freeze for firmer fudge, 20 squares.

Sauce For Variety Food

CREAMED SAUCE

Ingredient:

1 box frozen cauliflower or fresh
1 (4 oz.) can stem and pieces of mushrooms
1/2 tsp. onion flakes
1/2 tsp. garlic powder
Salt & pepper to taste

Cook cauliflower in water as directed, Put in blender, using water it's cooked in, Add mushrooms using water they are packed in, Add onion flakes, garlic powder, salt and pepper, Blend until smooth.

Mama’s Saturday Afternoon Pizza

What You Need:

1 (12 in.) prepared pizza dough crust
2 TBSP olive oil
2 tsp. garlic, minced
2 C fresh spinach, coarsely chopped
1 1/2 C Granny Smith apples cored, peeled and chopped
1 C  Mozzarella cheese, shredded
1 C Blue cheese, crumbled
1/2 C Parmesan cheese, shredded
1 tsp. oregano

How to Make It:

Place the olive oil in a skillet over medium heat.
Add the garlic and cook 2 minutes being sure to stir a couple of times during cooking.
Place the prepared pizza dough on a pizza pan.
Brush the olive oil and garlic mixture over the entire pizza crust.
Bring the oven temperature to 450 degrees.
Spread the spinach evenly over the crust.
Add the apples evenly over the spinach.
In a large bowl toss the 3 cheeses together until well combined.
Sprinkle the cheeses over the top of the entire pizza.
Sprinkle on the oregano being sure to cover the whole pizza.
Bake 13 minutes until cheese has melted and the crust is a nice golden brown.

Serves 4 pieces

Moms deserve to treat themselves too.  This pizza is the perfect way to enjoy a lazy Saturday afternoon.

What Your Gealtin Choice

CRANBERRY GELATIN

  • 4 c. fresh cranberries
  • 1/4 c. cold water
  • 20 packs Sweet'N Low
  • 1 tsp. vanilla extract
  • 1 1/2 c. water
  • 1 envelope unflavored gelatin

Combine berries, 1 1/2 cups water, vanilla, and sweetener
Combine in large saucepan and bring to a boil
Simmer 10 minutes or until all berries pop.
Sprinkle gelatin on 1/4 cup water to soften
Dissolve in hot cranberry mixture.
Pour into mold and chill until set.

Mashed Potatoes

Butter Milk Mashed Potatoes.



2 Med Potatoes, boil in water for 1/2 hr, peel off skin and puree.
2 tbsp chopped chive.
2 tbsp butter.
1/4 cup milk.
Salt and Pepper to taste.

Ethical Home Business Owners- How do you know if you will be supported?

Have you ever had a conversation with someone who talks about another person and they do so in an unkind manner? The type of conversation they would not be having if the other person was actually there listening. They're basically talking behind their back. Why someone does this I'm not sure, could it be a feeling of inferiority, insecurity, inadequacy, malice... I don't know and without getting into a psychological debate as to why a person would do such a thing, let's just say that in the end, it's a lack of ethics.

When I see someone talking behind someone else's back, it immediately shows me that when I turn my back and walk away, this same person could very well start talking behind my back. I value ethics and respect which makes me associate with people of same mind set. I enjoy, and make a point, of maintaining empowering thoughts as consistently as possible and keeping the company of "back talkers" is not empowering my thought process at all.

In the world of home based business, the subject of ethics is extremely important because it involves competing factors which could easily push a business owner to diminish their competitor. They will talk behind their back. So when you're researching a business and shop around for the right person who will potentially become your mentor and you see them start to de-value others in order to boost themselves up, it should raise a big red flag on this person's ethics. If they're not confident enough about their ability to support you that they must shrink the competition in order to enlarge their appearances, you might ask yourself if you're talking with the right person. The "back talker" is ethically challenged and this is not the person you want to start a business with.

  • 1 tsp. vanilla

Blend ALBA, eggs, cream of tartar, and baking soda, Add 1 1/2 teaspoon vanilla and Sweet'N Low, Blend in blender, Blend until smooth, Pour onto wax paper lined small cookie sheet, Bake at 350 degrees for 15 to 20 minutes, Cool. Place on a slightly damp dish towel, Carefully peel away wax paper, Cool. Spread with cream filling and roll up "Jelly-roll" style, Place the roll in freezer for storage, Remove from freezer a few minutes before serving time. Slice, CREAM FILLING: Mix fruit juice, gelatin, and milk, Add lemon juice, add 1 teaspoon vanilla.

Unique Taste With Mushroom

CHICKEN STEW

  • 4 chicken breasts, stewed
  • 1 (6 oz.) can mushrooms
  • 1/2 med. head cabbage, chopped
  • 2 med. onions, chopped
  • Salt, pepper and garlic to taste
  • 1 (12 oz.) tomato juice

To stew chicken, cover with water and pressure 15 minutes, Remove chicken from water, add mushrooms, cabbage and onions, Add salt, pepper, and garlic to taste, Add tomato juice and chopped chicken, Simmer for about 1 hour.

Sweet Potato Casserole

What You Need:

2 large sweet potatoes
2 Golden Delicious apples, cored and sliced into rings
1/2 C orange juice
1/4 C firmly packed brown sugar
1 tsp. cornstarch
1/8 tsp. ground cloves
2 TBSP pecans pieces

How to Make It:

Place the sweet potatoes in microwave safe dish.
Microwave the potatoes on high 8 minutes, rotating once, until just starting to soften.
Heat the oven to 350 degrees.
When the sweet potatoes have cooled enough to handle peel and cut into chunks.
Spray a casserole dish with a non stick cooking spray.
Cover the bottom of the dish with part of sweet potatoes.
Layers part of the apples over the sweet potatoes.
Continue layering until all the sweet potatoes and apples have been layered.
Place a saucepan over lower heat.
Pour the orange juice into the pan.
Stir in the brown sugar and cornstarch.
Add the ground cloves. 
Heat the mixture over low heat stirring continuously until sauce begins to thicken about 5 minutes.
Once the sauce has thickened to you licking pour it over the sweet potatoes and apples.
Sprinkle the top of the casserole with the pecan pieces.
Bake 18 minutes or until the apples are fork tender.

Serves 6

This makes a wonderful addition to any Thanksgiving meal.  You can replace the pecans with walnuts or use mini marshmallows instead.

1/2 c. crushed pineapple, in own juice, drained
1 envelope ALBA 77

Mix ingredients together, Make a tin foil pan the size of a large chocolate bar, Pour ingredients into pan and freeze, When frozen, break into chunks.

Apple Banana Pound Cake

What You Need:

1 C butter or margarine, room temperature
2 1/2 C sugar
1/2 C light brown sugar, firmly packed
1 C sour cream
2 tsp. vanilla extract
6 eggs
3 C all purpose flour
2 tsp. cinnamon
1/2 tsp. baking soda
2 Granny Smith apples, cored, peeled and chopped
2 ripe bananas, sliced thin

How to Make It:

Place the butter in a large mixing bowl.
Add the both sugars to the bowl.
With an electric mixer on medium speed beat until light and fluffy about 3 minutes.
Add the sour cream and vanilla.
Continue beating 1 minute.
Add the eggs and beat for another 2 minutes or until all the ingredients are incorporated together.
In a separate bowl sift together the flour, cinnamon and baking soda.
Pour the dry mixture into the egg mixture.
Beat on low speed just until blended.
Gently fold in the apples and bananas.
Heat the oven temperature to 325 degrees.
Spray a Bundt pan with a non stick cooking spray.
Pour the batter into the prepared pan.
Bake 80 minutes or until a toothpick inserted in the center comes out clean.

12 servings

This cake is so moist it almost melts in your mouth.  For a change of pace add raisins and nuts to the batter at the same time you add the apples and bananas.

Health With Salad

CHICKEN SALAD

12 oz. sliced chicken
1/2 c. chopped celery
1/4 c. shredded carrots
1/4 c. lo-calorie salad dressing or mayonnaise
1 1/2 tsp. lime juice
Salt & pepper to taste

Combine chicken celery, and carrots, Stir dressing, juice, salt and pepper. Pour over chicken mixture, tossing to coat well.

Apple Crumb Cake

What You Need:

2 eggs
2 C sugar
1 1/2 C corn oil
2 tsp. vanilla extract
3 C all purpose flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/2 C pecan pieces
2 C Granny Smith apples, cored, peeled and chopped
1/2 C (1 stick) butter or margarine
1/4 C milk
1 C brown sugar

How to Make It:

Place the eggs in a large mixing bowl.
Add the sugar, corn oil and vanilla extract.
Stir well to combine all the ingredients being sure the sugar is completely moistened.
In a separate bowl sift together the flour, salt, baking soda and cinnamon.
Add the flour mixture to the egg mixture a little at a time being sure to stir after each addition.
When all the flour mixture has been added, continue stirring until completely moistened.
Stir in the pecan pieces.
Gently fold in the chopped apples.
Heat the oven to 350 degrees.
Grease and flour a large cake pan.
Pour batter into the cake pan evenly.
Bake 50 minutes or until toothpick inserted in the center comes out clean.
In a saucepan over low heat combine the butter, milk and brown sugar.
Bring mixture to a boil.
Continue boiling 2 minutes.
Pour mixture over hot cake and spread out evenly.

Serves 12

Any type of cooking apple will work in this recipe.

CHICKEN LOAF

4 oz. chopped raw carrots
1 c. chopped raw celery
1 tbsp. dehydrated onions
1 sm. can pimento, chopped
4 tbsp. diet mayonnaise
1 1/2 c. water
2 pkg. or cubes chicken bouillon
3 envelopes unflavored gelatin
1 tsp. garlic salt
2 tbsp. mustard
1 tsp. lemon pepper
1 tsp. salt
1/2 tsp. pepper
16 oz. cooked, chopped chicken

Mix all ingredients except bouillon, water and gelatin, Dissolve bouillon in 1 cup water, Dissolve gelatin in remaining 1/2 cup water, Add gelatin to boiling bouillon, Add to mixture, Pour into loaf pan, Refrigerate, Unmold, slice and serve.

Ham and Apple Tortilla Wraps

What You Need:

2 medium Washington apples, cored but not peeled
1 C water
2 TBSP lemon juice
3 TBSP mayonnaise style salad dressing
3 TBSP mustard
6 (12 in) flour tortillas
12 slices deli style ham
12 slices American cheese
3 C chopped lettuce

How to Make It:

Slice each apple into 12 thin slices.

Place the water and lemon juice into a bowl.

Stir to combine.

Place the apple slices into the mixture so they don’t turn brown.

Place the salad dressing and mustard together in a large bowl.

Mix together with a rubber spatula.

Lay each tortilla flat.

Spread the mustard mixture over each of the tortilla being sure to cover the tortilla well.

Layer 2 slices deli ham over the top of each tortilla.

Add 2 slices of cheese on top of the ham.

Remove the apple slices from the lemon mixture and pat dry with a paper towel.

Place 4 slices of apple on each tortilla.

Sprinkle with the chopped lettuce.

Grasping the side of the tortilla closest to you roll tightly around the ingredients and secure with a toothpick.

Serves 6

Kids love these little sandwiches. They make a great lunchbox sandwich that they are sure to eat. Cut them in bite size pieces for snacks or party treats.

Carmel Apple Perfections

What You Need:
1 C plus 1/4 C all-purpose flour
1/4 C plus 1/2 C firmly packed brown sugar
1/2 C butter or margarine
2 large eggs
1 tsp. vanilla extract
2 Golden Delicious apples, cored, peeled and chopped
1 C caramel candies, each cut in quarters


How to Make It:
Place the 1 C of flour into a large mixing bowl.
Sprinkle in the 1/4C of brown sugar.
With a pastry blender cut in the butter until mixture becomes crumbly.
Spray a square baking pan with a non stick cooking spray.
Bring the oven temperature to 350 degrees.
Press the crumb mixture into the bottom of the prepared pan.
Bake 8 minutes or until lightly brown.
Remove and set aside and be sure to leave the oven on.
Place the eggs in the mixing bowl and beat slightly with a fork.
Add the 1/4C of flour and 1/2C brown sugar to the eggs.
Pour in the vanilla.
Carefully stir in the apples and caramels.
Pour the mixture over the top of the baked crust.
Bake 28 minutes or until a light brown.
Remove and allow cooling completely before cutting into 16 squares.


Serves 16

These squares make great after school snacks. Kids also love them in their trick or treat bags at Halloween.

Add chicken liver and cook 10 minutes, Stir frequently, Add pineapple. Dissolve salt, sugar, and vinegar with 1/2 cup water, Add to skillet, Serve on cooked hot bean sprouts.

Sexy Sweet Alba

CHOCOLATE CREAM ROLL

  • 1 pkg. chocolate ALBA
  • 2 eggs
  • 1/2 tsp. cream of tartar
  • 1 1/2 tsp. vanilla
  • 1 pkg. Sweet'N Low
  • 1/2 c. fruit juice
  • 1 envelope unflavored gelatin
  • 1/2 c. evaporated skim milk
  • 2 tbsp. lemon juice
  • 1 tsp. vanilla

Blend ALBA, eggs, cream of tartar, and baking soda, Add 1 1/2 teaspoon vanilla and Sweet'N Low, Blend in blender, Blend until smooth, Pour onto wax paper lined small cookie sheet, Bake at 350 degrees for 15 to 20 minutes, Cool. Place on a slightly damp dish towel, Carefully peel away wax paper, Cool. Spread with cream filling and roll up "Jelly-roll" style, Place the roll in freezer for storage, Remove from freezer a few minutes before serving time. Slice, CREAM FILLING: Mix fruit juice, gelatin, and milk, Add lemon juice, add 1 teaspoon vanilla.

Ingredients:

  • 2 c. cherry flavored sugar free beverage
  • 1 envelope cherry flavored gelatin
  • 1 sm. banana, peeled and sliced

Sprinkle gelatin over 1 cup of beverage, Heat remaining beverage to a boil. Combine with gelatin mixture, Stir until gelatin is dissolved, Refrigerate until thick, Add bananas and chill until firm.
