Cake Of Apricot

APRICOT UP-SIDE DOWN CAKE

12 frozen apricot halves, thawed
1/2 tsp. lemon juice
1/2 tsp. brown sugar replacement
1/4 tsp. cinnamon
2 slices white bread crumbs
1 tsp. baking powder
Dash of salt
2 eggs, separated
1/3 c. granulated sugar replacement
3 tbsp. hot water
1/2 tsp. vanilla

Preheat oven to 350 degrees. Combine apricots, lemon juice, brown sugar, and cinnamon. Spread on bottom of non-stick small baking dish. Combine crumbs, baking powder, and salt. Beat egg yolks. Gradually beat in sugar until yolks are thick and lemon colored. Beat in water, bread crumb mixture and extract. Beat egg whites with a pinch of salt until stiff, not dry. Fold into egg mixture. Spoon over apricots. Bake for 25 minutes or until cooked throughout. 2 servings.

Salad Apple Pear and Tuna

The yummy recipes of salad

1 med. apple or pear
1 (3 oz.) water packed tuna
2 tbsp. diced green pepper
1 tbsp. lo-cal French or Italian dressing
2 tsp. lemon juice
Pinch of artificial sweetener
Lettuce cup

Dice pear and toss with tuna and green pepper. Combine dressing, lemon juice, and sugar substitute. Pour over salad and toss. Spoon into lettuce cup.

Turnover Yummy Apple

APPLE TURNOVER

1 apple, peeled, cored and sliced
1 tsp. lemon juice
1 tbsp. water
1 slice white bread
1/4 tsp. cinnamon
Artificial sweetener to equal 2 tsp. sugar

Cook sweetener, cinnamon, water, and lemon juice with apple. Cook until tender. Cool. Remove crust from bread and roll thin. Place apple mixture on 1/2 bread. Fold diagonally. Moisten edges and press together with fork. Bake at 425 degrees slower until crisp.

Sweet and Spicy Turkey Breast

What You Need:

1 TBSP black peppercorn
1 TBSP cumin
1 TBSP chili powder
1 TBSP oregano
1 TBSP minced garlic
1/4 C lime juice
2 TBSP olive oil
6 firm peaches, peeled and chopped fine
1 C peach preserves
2/3 C peach juice
1/4 C sugar
2 TBSP cider vinegar
4 jalapeno peppers, stemmed, seeded and chopped fine
1 TBSP cilantro, chopped fine
1 (4 lb) turkey breast
Canola oil

How to Make It:

Crush the peppercorn seeds as fine as possible.

Add the cumin, chili powder, oregano, minced garlic, lime juice and olive oil and stir into a paste.

Coat the turkey completely with the paste.

Place the turkey into a large zip lock bag, remove as much air as possible, seal tight and refrigerate overnight.

In a saucepan over medium high heat mix together the peaches, preserves, peach juice, sugar and vinegar.

Bring to a rapid boil then reduce the heat to medium low.

Stirring often simmer the mixture for about 30 minutes or until the sauce thickens.

Remove the mixture from the heat and allow cooling at least 10 minutes.

Place the cooled mixture into the food processor and process until very smooth.

Add the jalapeno peppers and cilantro and mix well.

Allow mixture to come to room temperature then refrigerate until ready to use.

Heat the grill on medium high.

Brush the turkey breast completely with the canola oil.

Grill skin side up over indirect heat for 1 hour 15 minutes.

Remove and allow cooling before slicing and serving with the peach mixture.

If you like your turkey breasts to be a little crispy on the outside place it on direct heat for 10 minutes before removing from the grill.

Grilled Mustard Chops

What You Need:

1 tsp dry mustard
1 tsp celery seed
1 tsp thyme
1/2 tsp salt
1/4 tsp pepper
1/4 tsp cayenne
4 bone in pork chops, 1 inch thick

How to Make It:

Mix the dry mustard, celery seed, thyme, salt, pepper and cayenne together in a small mixing bowl.

Rub each of the chops on both sides with the spice mixture.

Allow the chops to set at room temperature about 25 minutes.

Place the grill on high temperature.

Sear the chops 4 minutes turning once during cooking.

Lower the heat to medium temperature on the grill.

Continue cooking the chops 8 minutes or until the juices run clear.


When placing a rub on meat always be sure to press the rub into the meat with your fingertips. This will insure the flavor of the rub can be tasted in each and every bite.

The Magic of Apple

APPLE MAGIC

2 med. apples, pared, cored, coarsely chopped
1 1/2 tsp. cinnamon
Artificial sweetener to equal 5 tsp. sugar
2 envelopes (2 T) unflavored gelatin
10 to 12 fluid ounces lemon-flavored dietetic soda

Preheat oven to 350 degrees. In a deep, narrow, oblong pan arrange apples in layers. Combine 1 teaspoon cinnamon with sweetener to equal 1 teaspoon sugar. Sprinkle some of this mixture over each layer of apples. Sprinkle gelatin over 10 fluid ounces soda to soften. Add remaining sweetener and cinnamon; stir until dissolved. Pour mixture over apples; add remaining soda to cover apples. Bake at 350 degrees for 1 hour or until cooked throughout. While hot, refrigerate immediately, 4 to 6 hours or until set. Makes 2 servings.

Two diabetic recipes

PICKLED FRENCH STYLE GREEN BEANS

1 can beans
1 tsp. pickling spice
2 tsp. artificial sweetener
1/3 c. vinegar

Steam beans 5 minutes or less and strain. Mix rest of ingredients and bring to a boil. Strain to rid of spices. If needed you can add vinegar or sweetener to taste. Pour over beans and let stand overnight.


ALOHA SEAFOOD DISH

2 lbs. fish fillets
1/2 c. pineapple juice
1/4 c. steak sauce
1 tsp. salt
Dash of pepper

Place fish in single layer in shallow baking dish. Combine remaining ingredients and pour over fish. Let stand 30 minutes, turn once. Remove fish, reserving sauce for basting. Place fish on Pam sprayed broiler pan. Broil about 4 minutes, brushing with sauce. Turn carefully and brush with sauce. Broil until fish flakes when tested with fork. Garnish with lime wedges or pineapple if desired.

Bacon Mushroom Lettuce Wraps

What You Need:

4 slices of bacon cut into 1 in squares
1 small yellow onion, chopped fine and divided
1/4 lb button mushrooms, chopped fine
2 tsp. garlic, minced and divided
1 1/2 lbs ground chuck
1 tsp ground Italian parsley
1 tsp salt
1 tsp Worcestershire sauce
1/2 tsp pepper
1/2 tsp cumin
1/2 tsp dry mustard
1 TBSP olive oil + extra for brushing meat
1/2 C dry red wine
2 TBSP red wine vinegar
1 (8 oz) can tomato sauce
2 TBSP tomato paste
1 tsp paprika
1 tsp light brown sugar
Tabasco sauce
8 large lettuce leaves

How to Make It:

Place the bacon in a large skillet over medium heat.

Cook 6 minutes or until the bacon is cooked through but not crispy, drain well.

Add 1/2 of the onion to the skillet and sauté 5 minutes or just until soft.

Add the mushrooms and 1 tsp. garlic and continue cooking 5 minutes.

Allow the mixture to cool about 10 minutes then place in a large mixing bowl.

Add the bacon, ground chuck, parsley, salt, Worcestershire sauce, pepper, cumin and dry mustard.

Using your hands mix the ingredients together well.

Form eight 4 inch rolls and place the rolls on a platter.

Cover with plastic wrap and refrigerate at least 1 hour.

Place 1 TBSP of oil into a large sauce pan over medium heat.

Add the remaining onion and cook 5 minutes or just until the onion begins to soften.

Add the garlic and cook 1 minute stirring occasionally.

Pour in the wine and vinegar and bring the mixture to a boil.

Once boiling add the tomato sauce, tomato paste, paprika and brown sugar.

Reduce heat to low and simmer for 10 minutes or until mixture begins to thicken stirring often.

Add as much Tabasco sauce as you like and stir well.

Lightly brush the meat rolls with the remaining olive oil.

Heat grill to high and cook the rolls 8 minutes turning them ¼ turn every two minutes.

Place the cooked meat rolls on a lettuce leaf.

Cover with the tomato sauce and roll the lettuce leaf around the meat.

Secure with a toothpick and serve immediately.

These are not only delicious, but they are fun to eat.  The Tabasco sauce gives the sauce a hot and spicy flavor and brings out the flavor of the meat with each bite.

Diabetic Bars Cooking

Ingredients:
1 c. dates
1/2 c. prunes
1 c. water
1 stick margarine
2 eggs
1 tsp. soda
1 tsp. vanilla
1/4 tsp. salt
1 c. flour
1/2 c. chopped nuts

Cream margarine, vanilla and egg together. Sift all dry ingredients together in a separate bowl. Add water, dry ingredients, dates, prunes and nuts to creamed mixture. Spread in a cookie sheet pan. Bake at 325-350 degrees for 15-20 min. or until lightly brown

Choco Cream Amaretto

Ingredients:

3 oz vanilla ice cream
1 oz amaretto
1 oz chocolate syrup
1 chocolate cookie
4 ice cubes
Whipped cream

Preparing:

Liquefy all the ice cream, amaretto, chocolate syrup and ice cubes.

Serve it in a red wine glass.
Top it with the whipped cream and the chocolate cookie.

Caribbean Guacamole

Ingredients:

2 chopped avocados
1 cup chopped mature mango
1 cup chopped pineapple
1 / 4 cup rind coconut
1 tbsp lemon juice
Salt and pepper

Preparing:

Mix all ingredients in a bowl.
Serve with roasted bananas.

Asparagus and Mushrooms

ngredients:

6 fish fillet
400 g mushrooms
1 cup cooked asparagus, in pieces
1/2 cup chicken broth
1/4 cup oyster sauce
3 Cambray onions
2 tbsp almond
1 tbsp chopped ginger
1 tsp corn starch
Vegetable oil

Preparing:

Fry in oil the onion, ginger, almonds and mushrooms.
Add the chicken broth, oyster sauce and cornstarch.
Cook while moving to thicken.
Add asparagus, remove from heat and allow to cool at room temperature.

Wrap well each fish fillet in foil along with a bit of the sauce.
Steamed for 15 minutes and serve.

Almond Rice


Ingredients:

3 cups water
2 cups rice
1 cup almonds, chopped
1 cup onion, chopped
1/4 cup white wine
2 chicken broth envelopes
2 tbsps curry
4 tsp margarine

Preparing:

Fry the almonds in margarine until brown and set aside.
Fry in the same pan, the onion with the rice, curry and chicken broth for 15 minutes.
Add water and wine and cook over medium heat until all the water evaporates.
Add almonds and serve.

Ingredients:

2 cups cooked rice
2 cups pineapple, in pieces
2 cups Chinese roots
1/2 cup toasted almonds
4 radishes, sliced
2 onions chopped

Dressing:
5 tbsp sunflower oil
1 1/2 tbsp fruit vinegar
1/2 tsp grated ginger
Juice of 1/2 lemon
Salt and pepper

Preparing:

Mix rice with pineapple, Chinese roots, radishes, onions and almonds.
Combine all dressing ingredients and pour over rice salad.
Cover and refrigerate for 30 minutes.

1/2 apple

5 blackberries
3 strawberries

Preparing:

Mix in a shaker heavily all ingredients.

Pecan Pie With Low Calorie

HELEN'S LOW - CAL PECAN PIE
Low calorie recipes of pecan pie, it's great for tv watching

Ingredients:
9 inch unbaked pie shell
3/4 c. egg substitute
3 tbsp. all purpose flour
1/3 c. plus 1 tbsp. plus 1 tsp. thawed frozen pineapple juice concentrate
1/4 c. sugar
1/4 c. dark corn syrup
2 tbsp. reduced calorie tub margarine, melted
1 1/2 tsp. vanilla extract
1/8 tsp. salt
3 1/2 oz. pecan halves

Mix all ingredients except flour and pecans and bring to a boil. Now add flour and pecans. When mixture starts to thicken remove from heat. Pour into pie crust. Bake at 350-375 degrees or until golden brown on edges.

Diabetes Oatmeal Cookies

Yummy taste of oatmeal cookies and this recipe safe for diabetics

Ingredients:
3/4 c. vegetable shortening
1/2 c. Brown Sugar Twin
1/2 c. white Sugar Twin
1 egg
1/4 c. water
1 tsp. vanilla extract
1 c. all purpose flour
1 tsp. salt
1/2 tsp. baking soda
1 c. raisins
3 c. rolled oats, quick cooking or regular

Cream shortening,sugars, vanilla and egg together. Sift all dry ingredients together in a separate bowl. Add water, dry ingredients, raisins and oats to creamed mixture. Drop onto cookie sheet. Bake at 325-350 degrees for 7- 10 min. or until lightly brown

Spicy Pork Strips

Peachy Keen Spicy Pork Strips

What You Need:

2 TBSP apple cider vinegar
1 jalapeno pepper, minced
1 tsp garlic, minced
1 tsp oregano
1 tsp salt
1/4 tsp pepper
2 bone in 1 inch thick pork steaks
2 1/2 C fresh peaches, peeled and diced
2 plum tomatoes, chopped fine
2 green onions, remove green and slice thin
2 TBSP cilantro, chopped fine
2 TBSP lime juice

How to Make It:

In a small bowl stir the vinegar, jalapeno pepper, garlic, oregano, salt and pepper together well.

Place the mixture into a shallow container with a lid.

Add the pork steaks and cover.

Marinate in the refrigerator 4 hours.

Place the peaches, tomatoes, green onion and cilantro in a mixing bowl.

Add the lime juice and toss to cover.

Cover with plastic wrap and place in the refrigerator until ready to serve.

Remove the steaks from the marinade and discard the marinade.

Allow the steaks to sit at room temperature about 20 minutes.

Heat grill to medium temperature.

Cook steaks 10 minutes, turning once, until juices run clear.

Remove steaks and cover with aluminum foil.

Allow steaks to stand in the foil 5 minutes.

After 5 minutes unwrap the steaks and cut into strips.

Remove the peach salsa from the refrigerator.

Serve the steak strips over the salsa.

The combination of the spicy marinade and the sweet taste of the peach salsa make this a great meal for any taste bud. Oranges, pineapple or even apricots will work with this salsa as long as they are sweet to act in combination of the spices.

Cookies Of Apple sauce

Ingredients:

1/2 c. all purpose flour
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/4 tsp. allspice
1/2 c. quick rolled oats
1/2 c. raisins
Nutmeats (Optional)
1/2 c. unsweetened applesauce
1 egg, beaten
1/4 c. shortening
2 tsp. vanilla extract
1/4 tsp. orange flavoring (optional)


Sift all dry ingredients (including oats) together in a separate bowl. In a separate bowl mix applesauce, eggs, vanilla, orange flavoring (optional) dry ingredients and nuts. Drop onto cookie sheet. Bake at 325-350 degrees for 7- 10 min. or until lightly brown.

BBQ Leg Quarters

BBQ Leg Quarters Mamma’s Style

What You Need:

1/4 C ketchup
2 TBSP Dijon mustard
2 TBSP honey
2 TBSP cider vinegar
2 TBSP canola oil
1 TBSP dark brown sugar
2 tsp. Worcestershire sauce
2 tsp. dry mustard
1 tsp. paprika
1 tsp. garlic powder
1 tsp. onion powder
1/2 tsp salt
1/4 tsp cayenne
4 chicken leg quarters

How to Make It:

Place the ketchup, Dijon mustard, honey, vinegar and oil in a large mixing bowl.

Stir in the brown sugar until dissolved.

Add the Worcestershire sauce, dry mustard, paprika, garlic and onion powders, salt and cayenne.

Whisk to thoroughly blend the flavors together.

Place the leg quarters in a large zip lock bag.

Add the marinade.

Release as much air as possible from the bag and seal.

Place in the refrigerator at least 4 hours being sure to turn often.

Remove the chicken and discard the marinade.

Heat the grill to medium temperature.

Grill the leg quarters bone side down on indirect heat about 40 minutes.

Chicken is cooked through when the juices run clear.


For a crisper chicken place the leg quarters skin side down on direct heat for the last 10 minutes of the grilling time.

Great taste of apple pie with no sugar

Ingrediens:

12 oz. can concentrated apple juice
3 tbsp. cornstarch
1 tsp. ground cinnamon
1/8 tsp. salt
9 inch unbaked pie shell
5 sweet tasting apples, sliced

Mix all ingredients and bring to a boil. When mixture starts to thicken remove from heat. Pour into pie crust. Bake at 350-375 degrees or until golden brown.

Wachy Chocolate Cake

Ingredients:

1 1/2 c. cake flour
1/4 c. cocoa
2 tbsp. granulated sugar replacement
1 tsp. baking soda
1/2 tsp. salt
1 c. water
1 tbsp. white vinegar
1/4 c. safflower or corn oil
1 tsp. vanilla extract
1 egg

Sift all dry ingredients together and set aside. In a separate bowl mix all wet ingredients. Mix wet and dry ingredients together and mix well. Pour in a greased and floured cake pan unless using a non-stick pan. Bake at 350 degrees for 25 –30 minutes or until cake springs back when lightly touched in the middle.

3/4 c. skim milk
1/2 c. semi-sweet chocolate chips

Cream butter, brown sugar twin, vanilla and egg together. Sift all dry ingredients together in a separate bowl. Add milk, dry ingredients and chocolate chips to creamed mixture. Drop onto cookie sheet. Bake at 325-350 degrees for 7- 10 min. or until lightly brown.

Grilled Meatloaves

What You Need:

2 lbs lean ground beef

2 onions, minced

2 garlic cloves, minced

2 TBSP parsley, chopped

1 tsp ground coriander

1 tsp ground cumin

2 tsp salt

1 tsp pepper

2 flat metal skewers

How to Make It:

Place the ground beef in a food processor.

Add the onion, garlic and parsley.

Process until mixture becomes smooth.

Remove and place in a large mixing bowl.

Add the coriander, cumin, salt and pepper to the mixture.

With your hands mix all the ingredients together well.

Form the mixture into two meatloaves.

Run the skewers through the center of each loaf.

Heat the grill to medium high.

Place the loaves on the grill and cover.

Cook 20 minutes turning over half way through the cooking time.

If you like your ground beef a little rarer you can cook these for about 15 minutes. For more well done meat cook just a little longer.

Dash cloves

Marvelous Meat Munchers

What You Need:

1 lb chicken breasts, boneless, skinless and cubed

1 lb beef sirloin, boneless and cubed

1/2 C canola oil

3 garlic cloves, minced

1/3 C pineapple juice

2 tsp soy sauce

1 tsp red pepper flakes

4 jalapeno peppers

8 strips of bacon - cut in half

16 toothpicks

How to Make It:

Whisk together the canola oil and minced garlic in a large mixing bowl.

Add the pineapple juice and soy sauce and continue whisking until well blended.

Stir in the red pepper flakes.

Place the mixture into a large zip lock bag.

Trim any fat away from the pieces of meat.

Place the meat into the zip lock bag, close tightly and shake to insure the meat is completely covered by the marinade.

Allow the meat to sit in the marinade at least one hour.

Meat can marinate over night if you prefer.

Remove the meat from the bag and discard the marinade.

Cut the peppers lengthwise and remove the seeds, membrane and stems.

Cut the peppers into strips.

Place one strip of pepper on each piece of bacon.

Place one cube of meat on top of each pepper strip.

Add another pepper strip on top.

Wrap the bacon completely around each piece and secure with a toothpick.

Heat grill to medium hot or if using coals place coals in the center of the grill and when the coals burn down to a slight gray spread in a single layer.

Cook 20 minutes, turning every 5 minutes to insure they are cooked on all sides.

When done the bacon should be crisp and the juices from the chicken should run clear.

Make Dinner For Dad This Father’s Day

With the weather being nice and warm outside, why not let the kids help prepare dinner for dad on Father’s Day and make it a fun night out by the grill.

During the day, let the kids make decorations like handprints on a paper tablecloth, blow up balloons or make some simple paper lanterns. Then let them help you with dinner preparations. A great Father’s Day dinner from the grill includes delicious grilled steaks, pasta salad and Texas toast. Finish it all off with scrumptious brownies a la mode. 

Start by making this simple pasta salad. Cook the pasta ahead of time, and then let the kids mix all the salad ingredients together. Chill the pasta salad for several hours before serving.

Pasta Salad
Makes 5 servings
1 16-ounce package corkscrew pasta                             
1 cucumber                                                     
3 carrots                                                      
1 bunch broccoli                                               
1 15 1/2-ounce can garbanzo beans                              
3 tablespoons salad supreme                                    
1 16-fluid ounce bottle Italian herb dressing                   
Cook noodles and combine with everything else.

Now it’s time to prepare the marinade for the steaks.

Marinated Steaks
Makes 4 servings
1/2 cup balsamic vinegar                                       
1/4 cup soy sauce                                              
3 tablespoons garlic minced                                    
2 tablespoons honey                                             
2 tablespoons olive oil                                        
2 tablespoons ground black pepper                              
1 teaspoon Worcestershire sauce                                
1 teaspoon onion powder                                        
1/2 teaspoon salt                                              
1/2 teaspoon liquid smoke                                      
1 pinch cayenne pepper                                         
4 beef steaks - cut of your choice - rib eye is one of our favorites - but whatever you prefer


1.  In a medium bowl, mix the vinegar, soy sauce, garlic, honey, olive oil, ground black pepper, Worcestershire sauce, onion powder, salt, liquid smoke, and cayenne pepper.

2.     Place steaks in a shallow glass dish with the marinade, and turn to coat. For optimum flavor, rub the liquid into the meat. Cover, and marinate in the refrigerator overnight or up to two days. 

Now it’s time to cook those steaks on the grill. Of course Mom or Dad should be taking care of this.

3.  Preheat grill for medium-high to high heat.

4.     Lightly oil the grill grate. Grill steaks 7 minutes per side, or to desired doneness.

Texas Toast
What would dinner be without some sort of bread? Dad is sure to love this hearty Texas Toast. Kids can help spread the butter and sprinkle the seasoned salt.

1/4 cup butter or stick margarine, softened                
4 slices thick-cut white bread, about 1 inch thick             
1/2 teaspoon seasoned salt
                             
1. Set oven control to broil.

2. Spread butter on both sides of bread slices. Sprinkle with seasoned salt. Place on rack in broiler pan.

3. Broil with tops 4 to 6 inches from heat 2 to 4 minutes, turning once, until lightly toasted. Cut each slice diagonally in half. Serve warm or cool.

Dessert
Help the kids mix up a boxed brownie mix and bake them just before you sit down for dinner. Allow the brownies to cool while you eat, then get the kids to make dessert by placing a piece of brownie in a bowl, top it with some vanilla ice cream. Drizzle chocolate syrup over the ice cream and dessert is ready.

There you have it…the perfect Father’s Day dinner that Dad is sure to love, especially since the kids were busy making most of it.

Bread Of Banana

This recipe really has great yummy taste as friends while watching TV.

Ingredients:
  • 2 c. all purpose flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 1/2 tsp. pumpkin pie spice
  • 2 ripe bananas (mashed)
  • 6 oz. can frozen orange juice
  • 2 eggs
  • 1 c. raisins
  • Nuts (optional)

Sift all dry ingredients together and set aside. In a separate bowl mix all wet ingredients and mashed bananas. Mix wet and dry ingredients together and mix well, then fold in, nuts and raisins. Pour in a greased and floured loaf pan unless using a non-stick pan. Bake at 350 - 375 degrees for 30-45 minutes or when knife comes out clean.
