Applesauce Cake Diabetes Friendly

Another diabetes friendly cake used applesauce.

Ingredients:
  • 2 c. raisins
  • 2 c. water
  • 3/4 c. oil
  • 4 tbsp. Featherweight sweetener
  • 2 eggs
  • 2 c. flour
  • 1 tsp. soda
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1/2 c. nuts (if desired)
  • 1 c. unsweetened applesauce

Sift all dry ingredients together and set aside. In a separate bowl mix all wet ingredients. Mix wet and dry ingredients together and mix well, then fold in applesauce, nuts and raisins. Pour in a greased and floured cake pan unless using a non-stick pan. Bake at 350 degrees for 25 –30 minutes or until cake springs back when lightly touched in the middle.

Moist Sunflower Carrot Muffins

What You Need:

1 1/2 C whole wheat flour

3/4 C whole wheat pastry flour

4 tsp baking powder

1/2 tsp salt

2 C carrot puree

1/4 C maple syrup

1/3 C skim milk

1/4 C canola oil

2 tsp vanilla

1/2 C sunflower seeds

1/2 C raisins

How to Make It:

Sift together in large mixing bowl the flours, baking powder and salt.

In a separate bowl place the carrot puree.

Add the maple syrup and stir well.

Pour in the milk, oil and vanilla being sure to stir well to incorporate all the ingredients.

Pour the liquid into the dry ingredients and mix until just moistened.

Gently fold in the sunflower seeds and raisins.

Preheat oven to 400 degrees.

Spray a muffin tin generously with a non stick cooking spray.

Pour the batter into the muffin cups filling them 3/4 full.

Bake 18 minutes or until brown on top and a toothpick inserted in the center comes out clean.

Use the blender or food processor to make the carrot puree. Start with a couple of medium size carrots and then add one carrot at a time until you have 2 C. If the carrot puree is runny decrease the liquid ingredients by half.

Cinnamon Raisin Delights

What You Need:

2 C flour

1/3 C sugar

1 T baking powder

3/4 tsp salt

1/4 C canola oil

2 egg whites

1 C skim milk

1/2 tsp cinnamon

1 C raisins

1/2 C powdered sugar

2 tsp skim milk

How to Make It:

Sift together the flour, sugar, baking powder and salt in a large mixing bowl.

In a small mixing bowl combine well the oil, egg whites and milk mixing well.

Pour the liquid into the dry ingredients.

Mix with a wooden spoon just until moistened.

Gently fold in the cinnamon and raisins.

Preheat oven to 400 degrees.

Spray a muffin tin with a non stick cooking spray.

Pour the batter into the prepared muffin cups filling them 3/4 full.

Bake 20 minutes or until a toothpick comes out clean when inserted in the center of a muffin.

In a small bowl mix the powdered sugar and milk until smooth.

Allow the glaze to thicken slightly.

Drizzle the glaze over the tops of the cooled muffins.

Raisins, dates and figs are a great addition to muffins.

Tapioca Cake

Successfully cook this tapioca cake, a popular Malaysian desert known as kuih bengka. My Omega Juicer gave me a wonderful blend of the tapioca which resulted great texture on the cake.





1 tapioca (weigh about 500g (1lb), blend.
1/2 can coconut milk.
1/2 can fresh milk.
5 tbsp sugar.
5 tbsp tapioca flour.

Preheat oven to 180C (350F).
Stir all ingredient together and mix well.

Korean Pancakes (Buchingae)

Korean Pancakes or American omelets? Both has similar cooking concept. What matters is the flour or egg. So this is my trick to make great healthy finger food for kids!





1 cup Korean Pancake mix.
1 cup ICE water.
1/2 zucchini, thinly sliced.
Chives, thinly chopped.

Heat pan and add very little oil when hot.
Mix all ingredient together into a batter and mix well.

Ingredients:
  • 1 lb. lean ground beef
  • 1/2 c. chili sauce
  • 2 tsp. prepared horseradish
  • 1/2 c. minced onion
  • 2 tsp. Worcestershire sauce
  • 1/2 tsp. salt
  • 2 tbsp. corn oil

Mix all ingredients well, roll into balls, and brown in corn oil. Drain on paper towels.

  • 1 sm. cans tuna, water-packed
  • 3 hard boiled eggs, diced

Beef Food For Diabetes

DIABETIC BEEF PASTIES

Cooking with beef as material is general. But this recipe is special because its also great and delicious for diabetic suffering.

Crust:
  • 3/4 tsp. Salt
  • 1/4 c. plus
  • 2 tsp. vegetable shortening
  • 1 egg
  • Water

Put flour and salt in mixing bowl. Cut in shortening. Beat egg in a measuring cup. Add water to make 1/2 cup, add to flour and mix until well moistened. Divide dough into 6 balls. On lightly floured board, roll balls into circles between waxed paper. Then set aside.


Filling:
  • 3/4 lb. coarsely ground beef (raw)
  • 2 c. diced raw potato
  • 3/4 c. diced raw carrot
  • 3/4 c. diced celery
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 2 tbsp. water

Once all filling ingredients have been well mixed. Spoon on to dough, and wrap around beef. Bake at 350 degrees for about 10 – 15 min or until dough has become golden brown.

Ingredients:
8 eggs, whip hard
1 tsp. salt
2 1/2 c. milk or water
1 c. flour

Mix all ingredients and pour onto grill. Cook on each side until lightly brown.


PORK CHOPS & STUFFING

Ingredients:
5 pork chops
1 box croutons, prepared to box directions, as stuffing
1/4 c. water

Brown pork chops, make sure cooked well. Serve with stuffing.

Beef Stew Popular For Moms

MOM'S BEEF STEW

This is most Moms’ beef cook popular, and this food has really yummy taste.

1/4 c. ginger ale
1 tbsp. red wine vinegar
1 can consomme soup
Salt and pepper
1/4 c. flour
1 lb. lean stew meat
1/4 lb. mushrooms, sliced
2 med. potatoes, cut up
2 carrots, sliced
1 onion, sliced

Brown stew meat and sautee with onions and mushrooms. Add all ingredients into pot and cook until meat is and vegetables are tender.

Banana Muffins

Nana Banana Muffin

What You Need:

1/4 C and 2 T canola oil

1 C sugar

Enough egg substitute to equal 2 eggs or 4 egg whites

2 large very ripe bananas, mashed

2 C all purpose flour

1 tsp salt

1 tsp baking powder

1/2 tsp baking soda

1 tsp vanilla

1 C buttermilk

How to Make It:

Place the oil and sugar in a large mixing bowl.

Beat with an electric mixer on low speed until fluffy.

Add the eggs and mix until thoroughly mixed in.

Add the bananas and mix until batter is smooth.

In a large bowl blend together the flour, salt, baking powder and baking soda.

Alternating back and forth add the egg mixture and the buttermilk being sure to stir after each addition.

Dry ingredients need to just be moistened so be careful not to over stir.

Add the vanilla and stir slightly.

Preheat oven to 400 degrees.

Spray muffin cups with a non stick cooking spray.

Pour each muffin cup 3/4 full.

Bake 17 minutes or until the tops of the muffins are a golden brown.

For a little spice you can add 1/2 tsp each of cinnamon and nutmeg. This gives these muffins a wonderful taste but also that fresh baked aroma to the kitchen.

Delicious Skillet Cake

GRANDMA LOE'S SKILLET CAKE

Besides Mom’s, most Grandma also has the special cooking. Below is skillet cake recipes that most grandma’s cook favorite.

  • 1 3/4 c. cake flour
  • 1 tsp. baking powder
  • 1/4 tsp. soda
  • 1/4 tsp. salt
  • 1 c. sugar
  • 1/4 c. melted margarine
  • 1 egg
  • 1 tsp. vanilla
  • Buttermilk

Put margarine in cup, add egg and fill cup with buttermilk. Blend with dry ingredients (beat) before last line sifts flour, baking powder, soda, salt and sugar into bowl. Then beat with first mixture. Pour into skillet and top with topping.

Yummy Tuitti Fruitti Topping
  • 1 c. drained fruit cocktail
  • 1/2 c. brown sugar
  • 1/4 c. chopped walnuts
  • 1/4 c. margarine

Spoon fruit cocktail over top of batter, sprinkle brown sugar and walnuts on top of fruit cocktail, then drizzle with melted margarine


Almond Prune Topping
  • 1 c. cooked prunes, halved
  • 1/2 c. brown sugar
  • 1/4 c. slivered almonds
  • 1/4 c. margarine

Cinnanut Soy Muffin

What You Need:

1 C soybean flour

1 C all purpose flour

1 tsp salt

2 tsp baking powder

2 T sugar

3/4 C skim milk

Enough egg substitute to equal 1 egg

1 T canola oil

1 tsp cinnamon

1 C pecans, chopped

How to Make It:

Preheat oven to 425 degrees.

Spray each muffin cup with a non stick cooking spray.

Sift both flours, the salt, baking powder and sugar together in a large mixing bowl.

In a separate bowl whisk together the milk, egg substitute and oil.

Pour the liquid into the flour mixture.

Beat together just enough to moisten the dry ingredients the batter should be slightly lumpy.

Fold in the cinnamon and nuts with a wooden spoon just until mixed in.

Pour the batter into the muffin cups to fill each 3/4 full.

Bake 18 minutes or until a toothpick inserted comes out clean.

After baking the muffins they come out tough and slightly soggy the batter has been over stirred. By over mixing the finished product will become tough or have a rubbery texture. Only mix muffin batter until any dry ingredients are just moistened.

Special Soup From Moms

MOM'S WIENER SOUP

Most Moms has different special cook that has yummy taste for their child. This recipe below is my mom’s special soup.

4 wieners
1 onion
1 qt. milk
1 1/2 tsp. salt
4 tbsp. butter
2 tbsp. flour
2 c. cooked, diced potatoes
1/4 tsp. pepper

Brown potatoes, wieners and onions in 2tbsp butter. Mix milk, salt, pepper, flour and other 2 tbsp butter together, stir constantly until mixture boils and becomes smooth. Then mix everything together in a soup pan or pot, cook until everything is hot, and then serve.

Cornbread Muffins

Hunter’s Cornbread Muffins

What You Need:

2 C white corn meal

1 tsp salt

2 C boiling water

2 C skim milk

4 egg whites

4 tsp baking powder

1 T margarine, melted

How to Make It:

Preheat the oven to 425 degrees.

Spray a muffin tin well with a non stick cooking spray.

Place the corn meal and salt in the large mixing bowl and blend together.

Pour the boiling water over the cornmeal and quickly stir until the corn meal is moistened well.

Add the milk and again stir quickly or the corn meal will ball up.

With an electric mixer on low speed, beat in the egg whites until mixed in well.

Add the baking powder and continue to beat for 1 minute.

Add the melted margarine and mix with a rubber spatula until incorporated into the mix well.

Pour each muffin cup 3/4 full of the batter.

Bake 20 minutes or until golden brown and a toothpick inserted in the center comes out clean.

These muffins set off a great pork roast or pork chop meal. Spread a little margarine on the top of each muffin before serving.

1 sm. pkg. sugar-free vanilla pudding
1 1/2 c. milk (whole or nonfat)
1 c. canned pumpkin
1/4 tsp. cinnamon
1/4 tsp. nutmeg
Artificial sweetener to equal 1 tsp. sugar
1 baked 8-inch pie crust

Place pudding mix in a saucepan. Gradually add milk. Cook and stir over medium heat until mixture comes to a boil. Remove from heat and add pumpkin, spices and sweetener and mix well. Pour into baked crust and chill until firm, about 3 hours for finishing.


Diabetic recipes II

1 (16 oz.) can pumpkin
1 (13 oz.) can evaporated milk
2 eggs
1/4 c. Brown Sugar Twin
1/4 c. Sugar Twin
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
1/4 tsp. ginger
Sesame Seed Crust

Combine all ingredients and mix well in blender. Pour into Sesame Seed Crust. Bake at 425 degrees for 15 minutes, then reduce heat to 350 degrees, and bake 35 minutes longer. Exchange per serving: 1 bread, 1/2 milk, 1 fat.

Sesame seed crust directions cooking:

1 c. all-purpose flour
1/4 c. sesame seed
1/2 tsp. salt
1/2 c. plus 2 tbsp. corn oil margarine
2 or 3 tbsp. cold orange juice

Combine to make 1 (9-inch) pie shell.

Coffee Muffins

What You Need:

2 C all purpose flour

3/4 C sugar

1 1/2 tsp baking powder

1 tsp cinnamon

1/2 tsp salt

1 C skim milk

2 T instant coffee

1/4 C canola oil

2 T canola oil

2 egg whites

1 tsp vanilla

1/2 C miniature semisweet chocolate chips

How to Make It:

Preheat oven to 375 degrees.

Spray a muffin tin with a non stick cooking spray.

Mix together the flour, sugar and baking powder in a large mixing bowl.

Add in the cinnamon and salt and mix well.

Place the milk and coffee in a separate bowl.

Stir until the coffee is completely dissolved.

Stir in the oil, eggs and vanilla.

Continue stirring until the ingredients are mixed together completely.

Pour into the flour mixture and stir until just moistened.

Add the chocolate chips and stir well.

Fill each muffin cup 3/4 full of the batter.

Bake 15 minutes or until a toothpick inserted in the center of the center muffin comes out clean.

Cinnamon Muffins

What You Need:

1/4 C canola oil

1/2 C sugar

Enough egg substitute equal to 1 egg or 2 egg whites

1 1/2 C cake flour

1 1/2 tsp baking powder

1/2 tsp salt

1/4 tsp nutmeg

1/2 C skim milk

1/2 C sugar

1 tsp cinnamon

How to Make It:

Preheat oven 325 degrees.

Coat the muffin tin cups with a non stick cooking spray.

Cream the oil, 1/2 C sugar and eggs together in a large mixing bowl.

Place the flour, baking powder, salt and nutmeg together in a separate bowl.

Alternate between the dry ingredients and the milk and place into the creamed mixture.

Stir until just combined with each addition.

Fill the muffin cups about 3/4 full.

Bake 20 minutes or until lightly brown and toothpick inserted in the center comes out clean.

Mix the 1/2 C sugar and cinnamon together well in a small bowl.

While still hot turn the muffins upside down and coat the tops with the sugar mixture.

One of the lightest muffins ever made. With the cinnamon and sugar mixture as a topping these muffins please even the pickiest of eaters.

No Sugar Pie And Whipped Cream

DIABETIC WHIPPED CREAM

1/3 c. instant nonfat dry milk
1/3 c. ice water
1/2 tsp. liquid sweetener

Chill small glass bowl and beaters. Combine ingredients and whip on high speed with mixer until consistency of whipped cream. Makes about 10 servings of 2 tablespoons.


NO SUGAR STRAWBERRY PIE

1 baked pie shell
1 qt. strawberries
3 tbsp. cornstarch
1 (8 oz.) pkg. cream cheese
1 c. apple juice, unsweetened

Slice berries, simmer 1 cup in 2/3 cups apple juice 3 minutes. Mix cornstarch with 1/3 cup apple juice, stir in berries. Stir constantly 1 minute until thick. Spread softened cheese over pie crust, put berries on cheese, pour cooked berries on top. Garnish with whipped cream and a few berries. Chill 3 to 4 hours.

Diabetic Cake

Yummy cake for diabetic use unsweetened applesauce as the sweet taste

2 c. water
2 c. raisins
1 c. unsweetened applesauce
2 eggs
2 tbsp. liquid artificial sweetener
3/4 c. cooking oil
1 tsp. baking soda
2 c. flour
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla

Preheat oven to 350 degrees. Cook raisins in water until water evaporates. Add applesauce, eggs, sweetener, cooking oil and mix well. Blend in baking soda and flour. Add cinnamon, nutmeg and vanilla and mix. Pour into greased 8x8 inch cake pan and bake approximately 25 minutes or until done.

Oatmeal Muffins

Grandmas Super Moist Oatmeal Muffins

What You Need:

1 C oats, quick cooking or instant

1 C buttermilk

Enough egg substitute to equal 1 egg or 2 egg whites

1/2 C brown sugar, packed

1/4 C canola oil

1 C all purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

How to Make It:

Pour the buttermilk in a large mixing bowl.

Add the oats and stir to be sure all the oats are moistened.

Allow the oats to soak in the buttermilk for 20 minutes.

After the oats have soaked add the eggs, sugar and oil.

In a separate bowl mix together the flour, baking powder, baking soda and salt.

Slowly add the dry mixture to the oats and stir just until moistened.

Preheat the oven to 400 degrees.

Grease a muffin tin with a non stick cooking spray.

Fill the cups 2/3 full of batter.

Bake 15 minutes or until a toothpick comes out clean.

Sugar Free Apple Pie

Sugar free recipes from apple pie dedicated to diabetes suffering

  • 4 c. sliced peeled apples
  • 1/2 c. undiluted frozen apple juice concentrate
  • 1 1/2 to 2 tsp. tapioca, cornstarch or flour
  • 1/2 tsp. lemon juice (optional)
  • 1/2 to 1 tsp. cinnamon, nutmeg or apple pie spice

Divide pastry into 2 parts and roll thin to fit an 8 or 9-inch plate. Set aside. Mix apples, apple juice concentrate, thickener and spice and stir until apples are well coated. Add lemon juice, if desired, to keep apples lighter-colored.

Taste 1 piece of apple to check the spice. Pour into the pastry-lined pie pan and top with the second crust or pastry strips. Seal the edges and cut slits in the top crust to allow steam to escape. Bake at 425 degrees for 40-45 minutes until golden brown. Serve warm or cold.

NOTE: Apples have some natural pectin, but a small amount of thickener is necessary to hold the sweet concentrate of the apples for an even flavor. One serving (including the crust)--220 calories; 1 1/2 fruit exchanges; 1 bread exchange; 1 fat exchange.

No Sugar Recipes

Another recipes for diabetis suffer use apple pie, off course it's no sugar

NO SUGAR APPLE PIE
  • 4 c. apple
  • 1/2 c. frozen apple juice concentrate, undiluted
  • 2 tsp. tapioca or cornstarch
  • 1/2 to 1 tsp. cinnamon

Mix apples and all ingredients until well coated; pour into pastry shell and top with pastry. Bake at 425 degrees for 40 to 45 minutes.



POLISH SAUSAGE STEW
  • 1 can cream of celery soup
  • 1/4 c. brown sugar
  • 27 oz. can sauerkraut, drained
  • 1 1/2 lb. polish sausage, cut in 2 inch pieces
  • 4 med. potatoes, pared and cubed
  • 1 c. chopped onion
  • 4 oz. shredded Monterey Jack cheese

Cook sausage,potatoes, and onion until done. Mix soup, sugar & sauerkraut, cook until blended. Mix with other ingredients and top with cheese.

Chocolate Chip Muffins

Gooey Chocolate Chip Muffins

What You Need:

1 1/2 C all purpose flour

1 C sugar

1/4 C baking cocoa

1 tsp baking soda

1/2 tsp salt

1/4 tsp baking powder

2 ripe bananas, mashed

1/3 C canola oil

Enough egg substitute to equal 1 egg or 2 egg whites

1/2 C miniature semisweet chocolate chips

How to Make It:

Preheat oven to 350 degrees.

Spray the muffin cups with a non stick cooking spray.

Place the flour, sugar, cocoa, baking soda, salt and baking powder in a large mixing bowl.

Stir to combine.

In a small mixing bowl mix together the oil and bananas.

Add the egg substitute and stir well.

Carefully pour the mixture into the dry ingredients.

Mix to combine just until the dry mixture is moistened completely.

Carefully stir in the chocolate chips.

Fill each cup 2/3 full.

Bake 22 minutes or until toothpick inserted in the center comes out clean.

These muffins make a great after school snack with a large glass of milk.

Germany Yummy Recipes

There are below two sauce recipes from German.

KRAUTRUNZA
  • 1 link (approximately 1/4 lb.) German sausage
  • 1 lb. ground beef
  • 1 sm. head cabbage
  • 1 med. onion
  • Salt and pepper
  • Yeast dough

Brown meats and add other ingredients, cook until tender and serve



GERMAN SAUERKRAUT
  • 1 can Bavarian sauerkraut, partially drained
  • 1 apple, cored and sliced
  • 1 onion, chopped
  • 2 or 3 slices bacon

Mix together and cook until all is tender.

Apple Muffins

An Apple a Day Muffin

What You Need:

3/4 C canola oil

2 C sugar

Enough egg substitute to equal 2 eggs or 2 egg whites

1 tsp vanilla

2 C unsweetened applesauce

4 C all purpose flour

2 tsp baking soda

1 tsp cinnamon

1/2 tsp allspice

1/2 tsp cloves

How to Make It:

Preheat oven to 350 degrees.

Place the sugar in a large mixing bowl.

Pour in the canola oil and stir until creamy.

Add the egg substitute and the vanilla.

Stir until mixed well.

Gently fold in the applesauce.

In another large mixing bowl sift together the flour, baking soda, cinnamon, allspice and cloves.

Slowly add them to the sugar mixture and mix just until moistened.

Spray the muffin tin with a non stick cooking spray.

Pour each cup 3/4 full of batter.

Bake 20 minutes and test with a toothpick before removing.

Muffins are a great fast breakfast. Serve them with a glass of milk or juice.

Polish Bigos Kluski Patchlings

Although it has funny names but their taste really delicious yummy


Polish Bigos Kluski
  • 2 lb. ground beef
  • 3 tbsp. Crisco
  • 2 c. diced green pepper
  • 2 c. sliced onions
  • 10 1/2 oz. can tomato soup
  • #2 can tomatoes
  • 3/4 c. water
  • 1 - 2 tbsp. salt
  • 1/4 tsp. black pepper
  • 1/8 tsp. red pepper (optional)
  • 1/2 pkg. kluski noodles

Brown ground beef. Then add peppers, onions, cook until lightly sautéed. Cook noodles per package direction. Add the rest of the ingredients and cook until well blended. Mix sauce with noodles or let them put on their own sauce.


Patchlings

  • 5 c. flour
  • 1 egg
  • 1 tbsp. shortening
  • 1 c. milk

Mix all ingredients together, drop on cookie sheet, and bake at 350 degrees for about 10 min.

Basic Muffin Recipe

Just Add to Me Muffin Mix

What You Need:

2 C all purpose flour

1/3 C sugar

1 T baking powder

3/4 tsp salt

1/4 C canola oil

2 egg whites

1 C skim milk

How to Make It:

Place the flour, sugar, baking powder and salt in a large mixing bowl.

Blend all the ingredients together well.

In a separate bowl blend the oil, egg whites and milk until blended completely together.

Pour into the dry mixture.

Mix just until everything is moistened.

Preheat the oven to 400 degrees.

Prepare a muffin tin with a non stick cooking spray.

Fill each muffin cup 2/3 full of batter.

Bake 20 to 25 minutes or until a toothpick inserted in the center of a couple of muffins comes out clean.

This is just a basic muffin recipe. You can anything you like to make these your own special muffins such as fresh or frozen berries, baking chips, nuts or even finely chopped vegetables. All muffins will be mixed together the same way just add your additions once the batter is completely mixed together. Bake as directed in this recipe.

Sambal Ikan Bilis Tumbuk

Sambal Ikan Bilis Tumbuk

Bahan
Ikan bilis (basuh, tumbuk, goreng garing dan tos)
8-9 ulas bawang merah (blend/tumbuk)
3-4 ulas bawang putih (blend/tumbuk)
Cili kering (blend) (ikut citarasa masing-masing)
Kentang (potong kuib, goreng dan tos)
Terung (potong ikut citarasa masing-masing, goreng dan tos)
Minyak masak
Garam
Gula

Bahan

  1. Goreng dan tos bahan-bahan yang diperlukan.
  2. Tumis bawang putih dan bawang merah sehingga garing.
  3. Masukkan cili yang diblend, sedikit gula, garam dan masak sehingga cili betul-betul masak.
  4. Masukkan ikan bilis, kentang dan terung. Gaul rata.
  5. Masak sekejap dan hidangkan.

Ikan Cencaru Tomato

Bahan-bahan
2 ekor Ikan cencaru
6 biji - Buah tomato
Lada boh cap lada
Garam dan serbuk perasa


Cara-cara


  1. Ikan dibersihkan dan dibelah dua.
  2. Buah tomato dipotong kecil dan digaulkan bersama lada boh, garam dan serbuk perasa.
  3. Kemudian sumbatkan pada ikan yang dibelah tadi. Diperap seketika.
  4. Panaskan minyak dan goreng.
  5. Ikan disajikan dengan nasi panas.

Ikan Kembung Balut Daun Pisang

Ikan Kembung Balut Daun Pisang

Bahan-bahan:
Ikan kembung secukupnya
Daun pisang secukupnya
10 helai daun limau purut [dihiris halus]
200gm cili hidup merah
100gm lada kering
2 labu bawang besar
3 labu bawang putih
2 inci halia muda
1 biji limau kasturi
Kicap manis secukup rasa
Garam
Serbuk perasa
Minyak untuk menumis secukupnya

Cara-cara penyediaan:
1. Kisar kesemua bahan kecuali ikan dan daun pisang.
2. Letak ikan di atas daun pisang dan lumurkan dengan rempah yang telah dikisar.
3. Kemudian balut daun pisang dan disematkan dengan lidi.
4. Perap dalam peti sejuk dan sedia untuk di barbeku.

Ikan Panggang Percik

Ikan Panggang Percik

Bahan-bahan
1 ekor ikan siakap dicuci bersih, dibuang perutnya dan dikelar-kelar.

Bahan-bahan Sambal Percik
2 cm halia
10 ulas bawang merah
3 ulas bawang putih
2 cm kunyit hidup
2 batang serai dimesin sampai lumat
3 helai daun limau purut
5 biji buah keras
4 biji cili padi
7 biji cili merah
3 cawan santan pekat (dari 3/4 biji kelapa yang diparut)
Jus dari sebiji limau nipis atau lebih
Garam dan gula secukup rasa
Minyak untuk menggoreng
Beberapa helai daun pisang
2 helai daun pandan
Sekeping kertas timah (Aluminum Foil)
2 biji cili merah untuk hiasan di atas ikan

Cara-caranya

  1. Panaskan minyak dan tumis rempah-rempah yang dimesin sampai wangi.
  2. Masukkan santan dan masak perlahan-lahan sampai ianya pekat.
  3. Masukkan garam, gula dan asam limau.
  4. Letakkan ikan yang beralaskan daun pisang & daun pandan diatas kertas timah dan sapukan kuah percik di rata-rata ikan.
  5. Bungkus rapat-rapat dan dibakar pada suhu 180°C selama 20 minit sampai masak.

Ikan Siakap Bakar Berempah

Ikan Siakap Bakar Berempah

Bahan-bahan:
1 ekor ikan siakap bakar
1 kuntum bunga kantan
Sedikit daun pasli
2 biji cili merah | dibentuk bunga
Sedikit ketumbar
Sos berempah

Cara Hias:
1. Letak serong ikan siakap bakar di atas pinggan empat segi sama.
2. Letak pula bunga kantan di tepi ikan.
3. Kemudian hias daun pasli. Letak di sebelahnya cili merah.
4. Kemudian hiaskan ketumbar.
5. Tuangkan pula sos. Akhir sekali tabur daun ketumbar di atasnya.

Ketam Dondang Sayang

Ketam Dondang Sayang


Bahan-bahan:

1/2 cawan minyak masak

1 cawan santan (daripada sebiji kelapa)

2 batang serai, diketuk

2 keping asam gelugur

1 kg ketam, dibuang kulit dan dicuci bersih

Garam secukupnya

3 helai daun limau

1 helai daun kunyit


Bahan kisar:

5 biji bawang merah

3 ulas bawang putih

3 cm kunyit hidup

3 cm halia

10 tangkai cili kering, yang direbus

1 1/2 cm belacan Melaka


Cara membuat:

1. Panaskan minyak dan tumis bahan kisar sehingga terbit bau.
2. Masukkan santan, serai, asam gelugur dan kacau rata.

3. Apabila kuah mula mendidih dan pekat, masukkan ketam dan garam secukupnya.
4. Kacau rata dan tutup periuk, kecilkan api. Biarkan 10 minit.

5. Setelah ketam masak, masukkan daun limau dan daun kunyit. Kacau rata. Hidangkan panas-panas.

1. Tumiskan bahan-bahan kisar sehingga pecah minyak.

2. Masukkan ketam dan goreng seketika.

3. Masukkan santan dan asam keping.

4. Masukkan daun kunyit dan daun limau purut.

5. Masak hingga ketam masak.

15 biji cili api/cili kering

5 ulas bawang merah

5 ulas bawang putih

2.5 sm kunyit

Gula

Cara membuatnya:
1. Ketam dipotong dan dibersihkan.
2. Kelapa diperah dan diambil santannya (asingkan patinya.)
3. Cili, bawang merah, bawang putih dan kunyit ditumbuk.
4. Masukkan santan dan serai di dalam periuk di atas api yang sederhana.
5. Masukkan bahan tumbuk dan kacau sehingga mendidih.
6. Masukkan ketam dan masak sehingga ketam berwarna jingga kemerahan.
7. Tambah garam secukup rasa dan gula jika perlu.
