Greek Parsley Salad (Tabbouleh)

This Healthy Salad is known as Tabbouleh, Tabouleh, Tabouli or Taboleh at Greek Restaurant. Great side dish for Hainanese Chicken Rice. No cooking is required, just mix them up and enjoy.





Ingredients:
2 tbsp bulgur cracked wheat, soak in water overnight, drain and squeeze out excess water
1/4 large bunches English parsley, discard stems and finely chop
1/4 onion, dice
1/2 cucumber, dice
