Cucumber Kimchi

I paid $5 for a carton of pickling cucumber at farmer's market. No doubt 1/3 are rotten, but I still got to deal with the 2/3 - 100++ of them! So, I made Cucumber Kimchi with this recipe.



1/2 bowl of thick slice cucumber (I use a 4 liter mixing bowl here)
2 tbsp apple cider vinegar
2 tbsp salt
1 tsp mince garlic
2 tbsp hot pepper paste
