Seafood Ceviche Recipe

My fiance is from Mexico and absolutely loves ceviche. One day I decided to tackle it on my own and came up with a great recipe for it. Not bad for never having made it before in my life.

Ingredients
1 16 oz. bag of a seafood medley, thawed if frozen
1 medium tomato, diced
1 medium onion, diced
1/4 cup chopped cilantro (more or less to your liking)
4 medium limes
2 tbsp lemon juice
1 tsp. salt
1/2 tbsp. chili powder (or to your liking)
fresh ground black pepper

Directions
In a large glass bowl, mix in seafood, tomato, onion and cilantro.
Cut limes in half and squeeze the juice into the mixture. Add any pulp as well.
Mix in the lemon juice, chili powder and salt.
Add black pepper to your liking. I ground about a teaspoon or so.
Stir well.
Cover with plastic wrap and refridgerate for at least 2 hours. Sometimes I let it sit overnight.
Serve with tortilla chips or on a tostada. I use whole wheat tortilla. It is a nice flavor with the ceviche.
