Ingredients:
500g medium-sized green prawns
500g white fish fillet
150g vermicelli
1.5L fish stock
4spring onions, chopped
stem of lemon grass, 10 cm long
1 tablespoon curry paste
1teaspoon shrimp paste
1teaspoon ground turmeric
1cup coconut milk
1 1/2 cups finely shredded lettuce
2tablespoon chopped mint
How To Make:
Peel and devein prawns, cut fish fillets into 2cm cubes.
Place vermicelli in large bowl. Pour over hot water to cover. Stand 10 minutes:drain.
Combine fish stock in a pan with spring onions, lemon grass, curry paste, shrimp paste and turmeric, bring to the boil. Reduce heat to low, simmer for 3 minutes.
Add prawns, fish and coconut milk, simmer for 3 minutes. Remove lemon grass.
To serve, place lettuce and vermicelli into bowl, add soup, sprinkle with mint.

Cooking Time: 10 Minutes
